Bluesberry Pancakes

Directions:

  1. Whisk together flour, baking powder, sugar, and salt in a medium bowl.
  2. Stir in the granola. In a small bowl, whisk together egg, milk, and butter.
  3. Fold the milk mixture into the flour mixture just until incorporated.
  4. Grease a non-stick frying pan with canola oil and pour spoonfuls of batter into the pan.
  5. Cook each pancake about 3 minutes per side.
  6. Serve right away with a drizzle of warm maple syrup.
